Aromatic Couscous*

Serves 2

1/2 C couscous
1 C no-salt chicken stock
1/2 C water
1/4 C low-sodium tomato sauce
2 oz (about 1/3 C) minced zucchini
1-1/2 oz (about 1/3 C) minced carrot
1 clove garlic, minced
1/2 tsp ground cumin
1/4 tsp ground coriander
1/8 tsp allspice
Freshly ground black pepper
1/16 tsp cayenne pepper
3 T chopped parsley

Bring chicken stock, water, tomato sauce, zucchini, carrot, garlic, and spices to a boil. Boil for 2 minutes. Add couscous. Reduce heat to medium and cook for 3 minutes, or until most of the water is absorbed and the couscous is fluffy.

Cover, remove from heat, and let steam for 2 minutes. Stir in parsley, mixing gently. Makes 2 C.
