Tofu Burgers

Serves 6

1/2 1b tofu, drained, pressed, and mashed
2 T tahini
1/3 C finely chopped onion
2 tsp oregano
2 T finely chopped or ground sunflower seeds
1/4 C unsalted whole-wheat cracker crumbs
1 T low-sodium soy sauce
Freshly ground black pepper to taste
Whole-wheat flour

Mix tofu with tahini until smooth; set aside. Sauté onion and oregano in cooking spray until tender and lightly browned. Add to tofu along with sun-flower seeds, cracker crumbs, soy sauce, and pepper, blending well. Add more cracker crumbs if needed to make a firm mixture. Shape into 6 patties. Dredge both sides in whole-wheat flour, dusting off excess flour. Brown patties on each side in cooking spray over medium heat.
