Lobster Stock*

Serves 3

5 Ib lobster bodies (claws and tails removed)
1/2 head garlic
1 tsp fennel seeds
1-inch piece fresh ginger
2 C Italian plum tomatoes
2 tsp tomato paste
1 orange, cut into 8 pieces
1 tsp dried basil
1 tsp dried oregano
1 tsp dried marjoram
1/2 tsp hot red pepper flakes
1-1/2 C white wine

Combine all ingredients in a small soup/stock pot with water to cover.

Bring to a boil, reduce heat, and simmer for 35 minutes. Strain. Makes about 3 C.
