Chicken Quesadillas

Serves 4

2 T lime juice
Freshly ground black pepper to taste
2 whole skinless chicken breasts, cooked and shredded
4 whole-wheat tortillas (7-inch diameter)
1 can (4 oz) green chiles, diced
3/4 C shredded part-skim mozzarella cheese

Sprinkle lime juice and pepper over shredded chicken. Place a tortilla in a shallow pan. Layer with the following: one-third of the chicken, one-fourth of the chiles, and one-fourth of the cheese. Repeat twice. Top with a tortilla and the remaining green chiles and cheese. Bake at 350° for 10 to 15 minutes, or until cheese is melted. Cut quesadilla into wedges and serve immediately.

Suggestion:

  • Serve with South-of-the-Border Salsa, Mock Sour Cream, and/or Guacamole.
