Apple-Spice Cookies

Serves 36

1/4 C soft tub margarine
1/3 C brown sugar
2 egg whites
1 C unbleached white flour
1/2 C whole-wheat flour
1/2 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
1/4 tsp nutmeg
3 T skim milk
1/2 C raisins
1/4 C finely chopped crystallized ginger
2-1/2 C peeled, diced Granny Smith apples

Mix both flours, baking soda, baking powder, cinnamon, and nutmeg. Set aside. Cream margarine and brown sugar. Beat in egg whites. Beat flour mixture into creamed mixture in thirds, alternating with milk. Stir in raisins, ginger, and apples. Drop by teaspoonfuls onto cookie sheets, making 36 cookies.

Bake at 400° for 10 to 12 minutes or until golden brown. Place in an airtight container as soon as cookies are cool.
