Spanish Meatloaf

Serves 6

3/4 1b extra-lean ground beef
3/4 1b ground turkey breast
2 slices whole-wheat bread, torn into coarse crumbs
1/3 C finely chopped onion
1/4 C skim milk
2 egg whites, lightly beaten
1-1/2 tsp chili powder
1/2 tsp ground cumin
1/2 tsp dried oregano
1/4 tsp garlic powder
1/4 tsp pepper

Combine all ingredients well, but handling as lightly as possible. Form mixture into a 6 × 4 x 3-inch loaf. Place on a rack in a shallow roasting pan. Bake at 350° for 1 hour, or until a meat thermometer inserted into the thickest part of the meatloaf reads 170°.
