Lemon Sherbet

Serves 5

1/4 C sugar
1 tsp grated lemon rind
1/3 C fresh lemon juice
2 C skim milk
Yellow food coloring (optional)

Mix sugar, rind, and juice. Add milk slowly, stirring constantly, and stir until sugar is dissolved. Mix in 1 or 2 drops of yellow food coloring if desired. Freeze according to preferred method.


  • Artificial sweetener to taste may be substituted for sugar.
