Peach Muffins*

Serves 12

2 C oat bran
1/2 C whole-wheat flour
2-1/2 tsp baking powder
1 tsp cinnamon
1 C finely chopped dried peaches
4 egg Whites
3/4 C skim milk
1 T canola oil
1/2 C clover honey

Combine oat bran, flour, baking powder, cinnamon, and peaches. Beat egg whites, milk, oil, and honey; pour over dry ingredients and mix until just moistened. Pour equal amounts of batter into 12 muffin cups prepared with paper liners. Bake at 425° for 15 to 18 minutes.


• Plump peaches in hot water, cinnamon-flavored brandy, or fruit juice for 15 to 30 minutes. Drain, pat dry, and chop.

• Other dried fruit (such as cherries, cranberries, apricots, pears, pineapple, or dates) can be substituted for the dried peaches.
