Strawberry Salad

Serves 6

2 C sliced fresh strawberries
4 C torn fresh spinach leaves
2 T sliced almonds, lightly toasted
Orange Dressing

On individual salad plates, arrange strawberries on a bed of spinach leaves and sprinkle with toasted almonds. Drizzle 2 T Orange Dressing over each salad. Serve immediately.


  • Melba Sauce (page 419) may be substituted for the Orange Dressing.
  • Plain or vanilla low-fat yogurt (thinned with a little skim milk and flavored to taste with spices, extract, or fruit) may be substituted for the Orange Dressing.
  • Fresh mangoes, blueberries, bananas, oranges, or peaches may be substituted for part or all of the strawberries.
  • Fresh mint leaves can be substituted for 1/2 C of the spinach.
