Fresh Beet Salad

Serves 6

2 bunches red beets, unpeeled, washed, and trimmed (about 6 medium beets)
2 T water
1/4 C white wine vinegar
2 tsp caraway seeds
1 tsp sugar
2 T minced red onion
1 tsp horseradish
1/4 tsp ground cloves
1/4 tsp black pepper

Cook beets in water to cover until tender. Peel and slice. Combine remaining ingredients and pour over beets. Let beets marinate for several hours before serving, stirring occasionally.


  • Season to taste with fresh dill
