Marinated Potatoes*

Serves 4
1-1/2 C water
1/2 C vinegar
2 Idaho potatoes, peeled and diced small
2 T chopped parsley
2 T oil
1/4 tsp red pepper flakes
20 grinds freshly ground black pepper
2 cloves garlic, finely chopped

Bring water and vinegar to a boil. Add potatoes and cook until tender; drain well and transfer to a bowl. Sprinkle parsley over the potatoes. Heat oil, red pepper, black pepper, and garlic until garlic turns light brown; pour over the potatoes and mix together. Serve warm.
