Gnocchi Verdi Spinach
Serves 4
10 oz frozen chopped spinach, cooked and very well drained
8 oz low-fat ricotta cheese
8 oz low-fat cottage cheese
1/4 C egg substitute
1 tsp nutmeg
3 T freshly grated Parmesan cheese
1/4 to 1/3 C flour
Mix spinach with ricotta cheese, cottage cheese, egg substitute, nutmeg, and salt, blending thoroughly. Stir in Parmesan cheese and flour. Drop by teaspoons onto a lightly floured board and shape into balls. Cook until tender in boiling water. Serve hot.
Suggestion:
- Serve with Spaghetti Sauce, Double Red Sauce, or Roasted Red Pepper Sauce.
