Glazed Carrots

Serves 4

2/3 1b carrots, thinly sliced
1/2 tsp margarine, melted
1 T orange blossom honey

Cook carrots in 1/2 C boiling water, covered, over medium heat for 8 to 12 minutes, or until the carrots are tender; drain. Blend melted margarine and honey; pour over carrots. Cook over low heat, stirring constantly, until carrots are well glazed.

Suggestion:

  • Use brown sugar in place of the honey and add a dash of Grand Marnier.
