Kale & Potato Soup
Serves 8
4 medium white potatoes, peeled and diced
8 C water
1/4 tsp salt
1/2 tsp freshly ground black pepper
2 lb fresh kale, cut in thin shreds
3 cloves garlic, minced
Simmer potatoes in water until tender, about 20 to 30 minutes. Remove potatoes from pot, reserving liquid. Mash the potatoes and return them to the pot with liquid. Add salt and pepper and simmer for 20 minutes. Add kale and garlic; simmer for about 25 minutes. Adjust seasonings to taste. Serve hot.
