Rutabaga & Pepper Relish*
Serves 4
2 lb rutabaga, peeled and diced small
1/2 tsp cumin
Pepper to taste
1 medium red onion, diced small
1 medium red bell pepper, seeded, diced small
1 medium green bell pepper, seeded, diced small
Juice of 1/2 lemon
Sauté rutabaga, 1/4 tsp cumin, and pepper in cooking spray until tender; remove from pan and cool. Sauté onion and both peppers in cooking spray over moderate heat for about 1-1/2 minutes. Add remaining cumin. Sauté for 1 to 2 minutes until crisp-tender. Transfer to a bowl and cool. Mix with rutabaga and season with lemon juice. Serve with Grilled Swordfish.
