Plum Sauce

Serves 4

1 Ib fresh black plums, pitted and thinly sliced
1 T vinegar
1/4 tsp grated fresh ginger
2 T unsweetened apple juice
1/4 tsp minced garlic
2 T water

Bring plums, vinegar, ginger, apple juice, garlic; and water to a boil. Reduce heat and simmer, stirring constantly, until plums are tender and mixture is thick. Cool to room temperature.

Suggestion:

  • Use as a marinade and/or basting sauce for fish, poultry, or veal.
