Mock Hollandaise
Serves 10
2 T hot water
1/4 C reduced-fat mayonnaise
1/4 C nonfat plain yogurt
1 T fresh lemon juice
Blend hot water; mayonnaise, and yogurt in the top of a double boiler, stirring constantly until heated. Stir in lemon juice. Serve hot.
Suggestions:
- Instead of a double boiler, cook Mock Hollandaise in a microwave oven at 50% power, stirring every 30 seconds until hot. Do not overcook.
- Red Pepper Hollandaise: Add 1/4 tsp of chili powder and cayenne pepper to taste.
