Lime-Papaya Seed Vinaigrette*

Serving size: 1 T

1 tsp finely minced shallot
Finely minced zest of 1 lime and 1 orange
1/4 C mint, chopped fine
4 oz rice vinegar
8 oz cottonseed oil
2 T lime juice concentrate
1 medium papaya, puréed
Seeds from 1 papaya, cleaned, crushed

Combine shallot, lime and orange zest, mint, and rice vinegar. Whisk ingredients briskly. Slowly drizzle in oil while continuing to whisk the mixture (preparing a temporary emulsified dressing.) Fold in lime juice, papaya purée, and papaya seeds. Makes 2 C.
