Lemon-Thyme Vinaigrette*

Serving size: 1 T

1 oz shallot, minced
1 tsp sugar
1 C rice vinegar
Zest of 2 lemons
Juice of 2 lemons
1 pt salad oil
1 T fresh thyme
Pinch salt
Pinch white pepper

Mix shallot, sugar, vinegar, lemon zest, and juice vigorously. Slowly drizzle in the oil, whisking briskly, to create a temporary emulsion. Season to taste with thyme, salt, and pepper. Makes 2 C.
