Harvest Dressing
Serving size: 1 T
1/2 medium tomato, diced
1/4 cucumber, peeled, seeded and diced
1 T cooked corn
1 T zucchini, finely diced
1 T yellow squash, finely diced
1 T jicama, peeled, finely diced
1/2 T yellow bell pepper, finely diced
2 T fresh cilantro, chopped
1 T champagne vinegar
2 tsp olive oil
2 T no-salt-added V-8 juice
Freshly ground black pepper to taste
Mix all ingredients well. Chill before serving. Makes about 1-1/2 C.
