Creole Sauce*
Serving size: 2 T
1 T olive oil
1/2 C chopped onions
2 cloves garlic, chopped
1/2 C chopped celery
1/2 C chopped green onion
1 C green bell peppers, diced
1/2 C red bell peppers, diced
2 C fresh, ripe tomatoes
1/2 bunch fresh thyme, chopped
1/2 tsp Creole Seasoning
1/2 C water
Heat olive oil and sauté all ingredients (except tomatoes, seasonings, and water). Cook for about 5 to 8 minutes, stirring often. Add tomatoes, herbs, and water. Simmer slowly for 5 minutes, then re-season. Makes 3 C. Serve with Breast of Chicken Creole.
