Basil Pesto
Serving size: 1 T
1 tsp chopped fresh garlic
1/4 lb fresh basil
1/4 C pine nuts
1/4 C Parmesan cheese, freshly grated
3/4 C olive oil
Purée all ingredients in a blender or food processor. Store, tightly covered, in the refrigerator for up to 2-1/2 weeks. Makes 2 C.
Suggestion:
- Serve over pasta with sun-dried tomatoes and shrimp.
