Wild Rice & Turkey Salad

Serves 6

4 oz wild rice (about 2/3 C), rinsed well
1-1/2 C water
1/3 C brown rice
3/4 Ib fresh green beans, cut French style and steamed
3/4 1b cooked turkey breast, cut into 1/2-inch pieces without skin
1/4 lb fresh mushrooms, sliced thin
1 C julienned carrots
1/4 C chopped fresh parsley
Basil-Mustard Vinaigrette 
6 leaves green leaf lettuce

Bring wild rice and water to a boil. Reduce heat and simmer, covered, for 25 minutes. Add brown rice. Simmer, covered, until water is absorbed, about 20 minutes. Cool for 30 minutes.

Toss rice, beans, turkey, mushrooms, carrots, parsley, and Basil-Mustard Vinaigrette. Serve on lettuce leaves.
