Spinach Salad
Serves 6
1/2 Ib raw spinach, washed, stemmed, and torn into bite-size pieces
2 medium oranges, peeled and sectioned, with juice
1 medium red onion, sliced and separated into rings
1/2 small Florida avocado, peeled and diced
Herb vinegar to taste
Freshly ground black pepper
Toss all ingredients together. Serve on chilled salad plates.
Suggestions:
- Lemon juice may be used with or in place of the herb vinegar.
- California avocados may by used, but they are slightly higher in fat than Florida avocados.
