Seafood Salad

Serves 8

8 C torn Bibb lettuce
1/2 C thinly sliced radishes
1/4 C sliced scallions
1 C cooked crab meat, chopped
1 C cooked small shrimp
1 C cooked lobster, chopped
2 tomatoes, seeded and diced
1 T lemon juice
1/2 C reduced-fat mayonnaise
3/4 C plain nonfat yogurt
1/4 C skim milk
1 T capers, optional
Freshly ground black pepper to taste

All ingredients should be well chilled. In a large mixing bowl, toss lettuce, radishes, and scallions. Add seafood and tomatoes and mix well. Shake remaining ingredients in a covered container until well blended and pour over salad.

Toss lightly until dressing is evenly distributed. Serve immediately.
