Papaya Grapefruit Salad with Honey-Lime Vinaigrette*

Serves 4

  • 2 T honey
  • 4 T lime juice
  • 1 T walnut oil
  • 1 T sherry wine vinegar
  • 2 C chicory (or any favorite greens)
  • 1 Papaya, peeled, seeded, quartered
  • 2 Small grapefruit, peeled, segmented
  • 1 tomato, peeled, seeded, diced

To make the vinaigrette, combine honey, lime juice, oil, and vinegar, mixing well with a whisk.

Place 1/2 C chicory on each serving plate. Very thinly slice the papaya on a bias and fan on top of lettuce. Place 5 grapefruit segments around the papaya. Top with diced tomato. Drizzle with Honey-Lime Vinaigrette.
