Garden Tuna Noodle Salad
Serves 4
1-1/2 C whole-wheat macaroni noodles
1 C diced red bell pepper
1/2 C sliced carrots
1/2 C frozen peas, thawed
1/4 C chopped scallions
1/2 C low-sodium, fat-free Italian dressing
1 can (12 oz) chunk white albacore tuna in water, rinsed and drained
Cook noodles according to package directions, omitting fat and salt. Rinse under cold water; drain. Combine remaining ingredients. Toss with noodles and serve.
