Cracked Wheat Salad

Serves 4

1/2 C uncooked bulgar wheat
1/4 C chopped tomatoes
1/4 C chopped zucchini
1/4 C chopped yellow squash
1/4 C chopped scallions
1/4 C chopped bell peppers (mixed colors)
1 tsp olive oil
Freshly ground black pepper to taste

Pour boiling water over the bulgar wheat and soak for 30 to 40 minutes, until softened; drain. Toss bulgar with the remaining ingredients. Chill, covered, for several hours before serving.


  • Tuna fish or chicken can be added to this salad.
