Cole Slaw

Serves 8

2 T lemon juice
1/2 C apple cider vinegar
1/2 C cold water
1/2 tsp mustard
2 T frozen unsweetened apple juice concentrate, thawed
1 small green cabbage, finely shredded
4 Granny Smith apples, cored and chopped
1 carrot, grated
2 celery ribs, finely chopped
1 green bell pepper, seeded and chopped
2 T parsley, chopped

Shake lemon juice, vinegar, water, mustard, and apple juice concentrate together in a tightly covered container to make dressing. Combine remaining ingredients in a large mixing bowl. Toss with dressing. Chill thoroughly before serving.
