Wild Rice & Carrots
Serves 4
1/2 C chopped unpeeled apple
1/2 C sliced green onions
1 C shredded carrot
1/2 C plus 3 T quick-cooking wild rice, uncooked
1/2 C plus 3 T water
2 T lemon juice
1/2 tsp ground cardamom
1/2 tsp freshly ground black pepper
Mix all ingredients in a microwave-safe 2-qt casserole; cover tightly. Microwave on HIGH for 2 minutes; stir. Continue cooking on HIGH until mixture boils, about 3 minutes. Continue cooking on Low (10% power) for about 5 minutes. Cool for 10 minutes, covered. Stir well before serving.
