Vegetable Rice
Serves 6
1 C water
1/2 C quick-cooking brown rice
1/4 C low-fat, low-salt Italian dressing
3/4 C finely chopped red bell pepper
1/2 C finely chopped broccoli
1/3 C grated carrot
1/2 C chopped fresh parsley
2 tsp lemon juice
Bring water, rice, and Italian dressing to a boil over medium-high heat. Reduce heat and simmer, covered, for 25 minutes or until the rice is tender and liquid is absorbed. Stir in remaining ingredients. Cover and let stand 10 minutes before serving.
