Black Beans & Rice
Serves 8
1 C chopped onion
1/2 C chopped green pepper
2 C cooked brown rice, prepared without salt or fat
1/2 tsp ground cumin
1/8 tsp dried coriander
2 C hot cooked black beans
3/4 C chopped tomato
1/4 C chopped green scallions, green tops only
Sauté onion and green pepper in cooking spray over medium-high heat until tender. Stir in remaining ingredients. Cook until thoroughly heated, about 3 minutes. Serve hot black beans over rice. Garnish with tomato and scallions.
Suggestions:
- Stir tomatoes into black beans and cook briefly, until tomatoes are hot but not soft.
- Add chili powder or other seasonings to taste.
