Barley Patties
1 C cooked barley, divided
1/3 C minced onion
1/3 C finely chopped green pepper
1/2 tsp dried thyme
1-1/2 C finely chopped mushrooms
2 T minced fresh parsley
1 T ground pecans
1/3 C whole-wheat cracker crumbs
Whole-wheat flour
Process 3/4 C of barley in a blender until smooth. Stir in remaining barley. Sauté onions, pepper, and thyme in cooking spray over medium heat. Add mushrooms. Cook until tender and lightly browned. Drain. Mix with barley, parsley, nuts, and cracker crumbs. Add more cracker crumbs if needed to form a stiff mixture. Form into 4 patties. Coat lightly with flour, dusting off excess. Using the same skillet, with more cooking spray if needed, brown patties on both sides; serve hot.
