Honey-Ginger Applesauce

Serves 6

1-1/2 1b Granny Smith Apples, peeled, cored, and chopped
1 C water
2 T honey
1 T lemon juice
1-1/2 tsp cinnamon
1/2 tsp ground ginger
1/2 C yellow raisins

Cook apples and water in a heavy saucepan for about 10 minutes, or until apples are soft. Add remaining ingredients and continue cooking for another 10 minutes. Stirring occasionally and cooking for a longer time will make the applesauce smoother, darker, and thicker.
