Ginger Pears
Serves 8
1 lb dried pears, chopped
1/4 1b crystallized ginger, chopped
2-1/2 C water
Juice of 1 medium orange
Simmer all ingredients, covered, until pears are soft and almost all liquid is absorbed, about 1 hour.
Suggestions:
- Use as a topping for cheesecake, frozen vanilla yogurt, crêpes, or French toast.
- Serve as a spread for biscuits or Prune Bread.
- Use as a filling for individual tarts or a pie.
- Dried peaches, apricots, or apples can be substituted for the pears.
