Cranberry Clafouti

Serves 8

3 C fresh cranberries
2 C coarsely grated apple
3/4 C unsweetened apple juice
3/4C + 3 T sugar, divided
2/3 C raisins
2 T cornstarch
1/4 C unsweetened orange juice
1-1/2 C all-purpose flour
1-1/2 tsp baking powder
3 T soft tub margarine
2 egg whites
1/4 C skim milk
1/2 tsp vanilla

Bring cranberries, apples, apple juice, 3/4 C sugar, raisins, and cinnamon to a boil. Cook, covered, until cranberries pop. Mix cornstarch with orange juice; stir into cranberries and cook until the mixture thickens. Pour into an 8-inch cake pan. Mix flour, 3 I sugar, and baking powder. Cut in margarine until the texture resembles rice. Stir in egg whites, milk, and vanilla. Spread over fruit.

Bake at 400° for 20 minutes, or until topping is light browned.
