Chunky Cinnamon Applesauce
Serves 8
1/2 C sugar
2 tsp cinnamon
2 C water
12 large cooking apples, peeled, cored, and chopped
Mix all ingredients in a heavy saucepan and bring to a boil. Reduce heat and simmer, uncovered, for 20 to 30 minutes, or until apples are tender. Stir carefully and infrequently during cooking for a chunky texture.
Suggestions:
- Sugar can be omitted during cooking and artificial sweetener to taste stirred in before serving.
- For a festive, rosy-colored applesauce, leave the skins on red apples while cooking.
- When tender, press the apples through a food mill and discard the peel. Continue with the recipe as directed.
