Cherry Cobbler

Serves 8

3 cans (16 oz each) sour cherries, drained
1/4 C sugar
2 T flour
3/4 C all-purpose flour
3/4 C rolled oats
3 T brown sugar
1-1/2 tsp baking powder
3 T soft tub margarine
2 egg whites
1/4 C skim milk
1/4 tsp almond extract
1 tsp grated orange peel

Mix cherries with 1/4 C sugar and 2 T flour; adjust sweetness to taste.

Spread cherries in a nonstick 8-inch baking dish. Mix 3/4 C flour, rolled oats, brown sugar, and baking powder. Cut in margarine until texture resembles coarse crumbs. Stir in egg whites, milk, extract, and grated orange peel. Spoon over cherries. Bake at 400° for 20 minutes, or until topping is lightly browned.

Serve warm.
