Blueberry Topping
Serves 12
1 T cornstarch
1/3 C firmly packed brown sugar
2 T lemon juice
1/4 C water
2 C fresh or frozen blueberries
Mix cornstarch with sugar. Stir in lemon juice and water. Add blueberries.
Microwave, covered, on HIGH for 5 to 6 minutes, stirring every 2 minutes.
Suggestions:
- Serve warm over pancakes, French toast, crêpes, or frozen yogurt.
- Use as a topping for cheesecake.
- Raspberries, strawberries, blackberries, or mixed berries can be substituted for all or part of the blueberries.
- Cool sauce to room temperature and stir in thinly sliced banana or chopped orange sections.
