Barbados Crumble

Serves 8

1/4 C dark brown sugar
1/2 C unbleached flour
1/4 C whole-wheat flour
1/8 tsp ground nutmeg
1/4 tsp ground cinnamon
1/4 C margarine, cut up and chilled
1 tsp lime juice
1 T rum
2 medium mangoes, peeled and cut in bite-size pieces
5 medium ripe bananas, sliced

For the topping, cut the sugar, flours, nutmeg, cinnamon, and margarine together with a pastry knife until the margarine is the size of small peas. Set aside. Mix lime juice and rum. Beginning and ending with the bananas, layer the fruit in a nonstick baking dish; sprinkle each layer with lime-rum mixture.

Sprinkle topping over the fruit, pressing down lightly. Bake at 350° until the topping is lightly browned, about 30 minutes.
