Banana & Passion Fruit Sorbet*
Serves 8 (1/2 C each)
1-1/2 lb ripe Java bananas, peeled
1 C simple syrup
1/2 C fresh passion fruit juice
1 C sparkling water
Purée all ingredients in a blender. Pass through a medium-fine sieve. Taste for flavor. Add more simple syrup if needed; if too sweet, add more passion fruit juice. Freeze in an ice cream maker according to the manufacturer’s directions. Serve in a chilled wine glass. Makes 1 qt.
Suggestions:
- A pleasant sauce can be made by reducing, over heat, passion fruit juice with just enough sugar to cut the acidity. Cool and spoon over the sorbet.
- Ordinary bananas can be substituted for the Java bananas.
