Baked Granny Smith Wrapped in Cinnamon & Cocoa Leaves*
2 oz raisins
6 pkg artificial sweetener
2 T cinnamon, divided
2 oz white wine
4 Granny Smith apples, peeled and cored
1 C water
3 sheets of phyllo dough
1 T cocoa
Soak the raisins, 2 pkg sweetener, and 1 T of cinnamon in white wine for 10 minutes. Fill the apples with the mixture. Bake at 325° for 15 minutes in a shallow pan with water. Remove and cool.
Lay out a sheet of phyllo dough. Spray it lightly with butter-flavored cooking spray. Sprinkle it with the cinnamon. Place another sheet of phyllo on top of the first sheet. Spray it lightly with butter-flavored cooking spray. Dust with the cocoa. Place the last sheet of phyllo on top. Spray it lightly with butter-flavored cooking spray and sprinkle with sweetener. Cut the sheets in quarters. Wrap each apple in one of the phyllo pieces, bringing the edges together at the top of the apple. Bake at 375° for 10 minutes, or until the shell is crisp and brown.
