Steamed Halibut, Ginger, Leeks, Plum Tomato, & Lemon Thyme*
Serves 2
Two 8 oz halibut fillet
2 slice (nickel-sized) ginger root, chopped
4 plum tomatoes, sliced
2 leek white, julienned
Fresh thyme or lemon thyme
Dash fresh lemon juice
Place sliced tomato, ginger, and thyme in an oven-proof sauté pan. Place halibut on top and season with pepper and a dash of lemon. Scatter leeks over the top and cover the pan tightly with foil. Bake at 450° for 18 minutes. Remove foil and slide entire ingredients onto a serving plate. Garnish with chopped fresh chives.
Suggestion:
- Sole, fluke, turbot, or flounder may be substituted for the halibut.
