Salmon Burgers
Serves 4
1 can (15-1/2 oz) salmon, drained (reserve 2 T liquid) and flaked
3 slices whole-wheat bread, torn in small pieces
1/3 C chopped onion
1/4 C skim milk
2 egg whites
2 T minced parsley
1 T lemon juice
1/4 tsp dill
Freshly ground black pepper to taste
Combine all ingredients, handling lightly. Shape into 4 patties. Pan-fry in cooking spray until brown, turning once.
Suggestion:
- Serve on buns with crisp lettuce and Cucumber-Dill Sauce.
