Pineapple-Ginger Shrimp
Serves 4
1/2 C unsweetened pineapple juice
2 T low-sodium soy sauce
1/2 tsp grated fresh ginger
2 tsp cornstarch mixed with 2 T cold water
1 lb shrimp, peeled and deveined
1 C unsweetened pineapple chunks, drained
1 C snow peas, lightly steamed
1/2 C thinly sliced star fruit
2 scallions, chopped
2 C hot cooked brown rice
1 kiwi, peeled and thinly sliced
1 T finely julienned crystallized ginger
Bring pineapple juice, soy sauce, and ginger to a boil; reduce heat. Add cornstarch mixture to pineapple juice and cook, stirring constantly, until thickened and clear. Add shrimp, pineapple, snow peas, star fruit, and scallions. Heat, stirring frequently, for about 5 minutes or until shrimp is opaque. Do not overcook.
Serve over rice, garnished with kiwi slices and crystallized ginger.
Suggestion:
- Cubed chicken or mild fish may be substituted for the shrimp.
