Grilled Salmon with Jalapeño Honey Glaze*

Serves 6

2 tsp chopped jalapeño pepper
3 oz honey
2 1b fresh salmon fish
Pepper to taste

Combine the chopped jalapeño and honey; set aside. Cut salmon into 6 por-
tions (5 oz each). Season with pepper. Spray a medium-hot grill with nonfat
cooking spray. Grill salmon for about 4 minutes on each side, or until firm in
center. Brush one side with jalapeño honey glaze during the last 2 minutes of
cooking.
