Zucchini Bread
Serves 20
3 C whole-wheat flour
1 C sugar
1/2 C chopped walnuts
2 tsp cinnamon
1 tsp baking soda
1/4 tsp baking powder
1/4 tsp nutmeg
6 egg whites
1/2 C plus T unsweetened applesauce
2-1/2 C grated zucchini
Mix all dry ingredients; set aside. Blend egg whites, applesauce, and butter-milk; stir in zucchini. Combine with dry ingredients. Pour into a Bundt or tube pan lightly coated with cooking spray. Bake at 350° for 45 to 60 minutes.
