Serves 4

1/4 C egg substitute
1/2 C 2% milk
1/2 C sifted flour
1/4 tsp salt

Blend egg and milk. Combine flour with salt; sift over the egg and milk mixture. Beat well until the batter is free of lumps. Pour into 4 large muffin or popover tins lightly coated with cooking spray. Bake at 425° for 30 minutes. Remove from oven and immediately puncture each popover with a sharp paring knife to allow steam to escape. Serve hot.
