Apple-Date Muffins
Serves 12
1 1/2 C oat bran
1/2 C whole-wheat flour
3 T brown sugar
2 tsp baking powder
1 tsp cinnamon
1/2 tsp nutmeg
1/2 C unsweetened apple juice
1/4 C skim milk
2 egg whites
2 T sunflower oil
2 T honey
1 C diced unpeeled Granny Smith apples
2 T chopped dates
2 T chopped pecans
Combine oat bran, flour, brown sugar, baking powder, cinnamon, and nutmeg; set aside. Mix apple juice, skim milk, egg whites, oil, and honey.
Stir in flour mixture, apples, dates, and pecans. Spoon batter into a non-stick muffin pan, filling each cup about two-thirds full. Bake at 400° for 20 minutes.
