Emergency Substitutions
You’re in the kitchen and cooking something but you just realized you’re out of a key ingredient. Here’s some ideas on emergency substitutions that are still a healthy alternative.
Breadcrumbs, dry, 1 C 3/4 C cracker crumbs
Buttermilk or sour milk, 1 C 1 C plain nonfat yogurt
1 T vinegar or lemon juice + skim milk to equal 1 C
1-3/4 tsp cream of tartar plus 1 C milk
Cake flour, 1 C 1 C minus 2 T sifted all-purpose flour
Cornstarch, 1 T 2 T all-purpose flour
2 tsp arrowroot
Garlic, 1 small clove 1/8 tsp garlic powder
Ginger, fresh, 1 I minced 1/8 tsp ground ginger
Lemon juice, 1 tsp 1/2 tsp vinegar
Mustard, prepared, 1 T 1 tsp powdered mustard
Tomato juice, 1 C 1/2 C tomato sauce + 1/2 C water
Tomato sauce, 1 C 3/8 C tomato paste + 1/2 C water
Vinegar, 1 tsp 2 tsp lemon juice
